Such Good Veggies

I am not a fan of zucchini, I especially hate the squeaky feeling it makes on my teeth.  Recently, I've discovered that if I use them when they are very small, I dont' mind them.  And I read that if you pick them often, they will grow more, so we'll see.

I've recently made veggies twice for supper.  All I did was throw some oil in a pan, crush some garlic and I tossed in the vegetables that were ready in the garden.  These were from the first time.  I didn't use the squash blossom though I know you can.

The second time, I didn't use chard.  I had a little broccoli ready and lots of green beans.  I think I used some zucchini and I used some peas that weren't mine.  This time, after it was done, instead of adding vinegar, I added some Emeril's spice.  K-ster actually said "wow, those vegetables were good!"

Wow, they must have been if k-ster mentioned them! 

So, this is going to be my frequent vegetable dish this summer.  Whatever vegetables look ready, toss them in some oil, cook them for a while and see what happens!

  1. I'm a veggie girl. My daughter is a vegetarian, probably because of my vegetable rich diet I fed her as a child. I could definitely be one, but every once and awhile, I must have a steak. And then of course, there's bacon. I could never give up bacon.

    Your vegetables look delicious. I'm not a big fan of zucchini myself, but I find that all vegetables are delicious when roasted with olive oil and kosher salt.

    And by the way, I am officially in love with your college town. Did you go to Vanderbilt? Nashville was the most amazing place. I can't wait to go back.
